They have pretty extensive documentation online. Here's something that might help that I found in ~30 seconds.

Don't be afraid to read the manual. It has some really good stuff.

It sounds to me like you're having a problem with automation. When you adjust the volumes, they'll spring back to whatever they were "automated" to, even if you hadn't changed them. Simply having this automation enabled will pretty much prevent you from adjusting volumes. You'll have to either turn off automation, or put it into write mode.

The same goes for tempo.

If you still can't get it to work, I'd say stop using Fruity Loops. It's fun, but it's pretty low-end compared to some other programs that go for about the same price.

This happens to me with firefox sometimes, too. I'm not sure if they're related or not, but here's the FF solution:

Hit Ctrl+Alt+del and open up task manager. Go to the processes tab and look for Maplestory.exe. If you find it, click on it and hit "end process". Then try running it again. If it still doesn't work, you'll just have to reboot everytime you want to play again unless someone else comes up with a good solution.

If you're into song writing and that sort of thing, I'd definitely suggest either a cheap acoustic guitar (many inexpensive ones sound great), or an electric piano/keyboard as you're thinking. Again, some of the cheap ones sound pretty realistic. Make sure you play before you buy, though. They might come with a bunch of funky sounds, but we all know the natural piano sound is the best. ;D
